Maryland Crab Cakes — Thathi’s Version

Thathi found this recipe from Once Upon a Chef and made it his own — doubled the crab, swapped in coconut oil, and stripped out anything that distracts from the crab itself. No potato, no bread filler. Just lump crab meat barely held together with a little panko, some egg, and good mayonnaise. The result is a crab cake that’s mostly crab.

Ingredients Ingredients
For the crab cakes

  • 4 large eggs

  • 5 tbsp good mayonnaise (Hellmann’s or Duke’s)

  • 3 tsp Dijon mustard

  • 2 tsp Worcestershire sauce

  • ½ tsp salt

  • ½ cup finely diced celery (about 2 stalks)

  • 4 tbsp finely chopped fresh parsley

  • 2 lbs fresh lump crab meat

  • 1 cup panko breadcrumbs

  • coconut oil, for cooking
For the quick tartar sauce

  • 2 cups good mayonnaise

  • 3 tbsp sweet pickle relish

  • 2 tsp Dijon mustard

  • 2 tbsp minced red onion

  • 2–4 tbsp fresh lemon juice, to taste

  • salt and freshly ground black pepper
Method
  1. Mix the base. In a large bowl, whisk together the eggs, mayonnaise, Dijon, Worcestershire, and salt. Add the celery and parsley and stir to combine.

  2. Fold in the crab. Add the crab meat, picking through it carefully to remove any hard or sharp cartilage. Add the panko. Using a rubber spatula, gently fold everything together — don’t overwork it, and don’t shred the crab. You want it chunky.

  3. Shape and chill. Line a baking sheet with foil. Shape the mixture into 6 generous crab cakes (about ½ cup each) and place on the sheet. Cover and refrigerate for at least 1 hour — this is not optional. The chill sets them so they hold together in the pan.

  4. Pan-fry. Heat a generous pour of coconut oil in a large non-stick pan over medium heat. When hot, add the crab cakes without crowding. Cook undisturbed until deep golden brown on the bottom, about 3–5 minutes. Flip carefully and cook the other side another 3–4 minutes. The oil may splatter a little — that’s fine. Serve immediately.

  5. Tartar sauce. Mix all sauce ingredients in a small bowl. Taste and adjust the lemon and seasoning. Cover and refrigerate until ready to serve. Can be made a day ahead.

↳ To bake instead

Preheat oven to 400°F (200°C). Place chilled crab cakes on a lightly oiled baking sheet. Bake for 25–30 minutes, flipping once halfway, until golden and cooked through. No splattering, slightly less crust.

Notes

  • No filler. Some crab cake recipes bulk out with mashed potato or excess bread — this one doesn’t. The panko is a binder only. You taste the crab.
  • Crab quality matters. Use the freshest lump crab you can find. If using jumbo lump, break the pieces up slightly so the cakes hold together.
  • The chill is essential. Don’t skip the 1-hour refrigeration — it’s the difference between crab cakes and crab crumble.
